Because of their profound nutritional makeup and impact on health promotion, I am dedicated to cooking with Cruciferous Vegetables and sharing tried and tested recipes that are palatable for even fussy eaters.

My green juice is perfect to kick start a cleanse or as an in-between snack. For this recipe, you will need a juicer.

INGREDIENTS (4 servings)

A pile of fresh kale leaves (remove stalks)

6 apples chopped

6 stalks celery sliced

Half a cucumber chopped

Half a lime

A handful of fresh mint leaves

Rinse all the ingredients with filtered water. I like to use organic ingredients and leave the skins on for maximum nutrient content.

Prep the kale leaves by removing the stalks. Chop the apple, cucumber and celery into pieces your juicer will handle.

Feed the prepped ingredients one by one into your juicer until everything has been juiced. Give the juice a stir and serve immediately or transfer into a glass bottle for storage in the fridge.

Consume on the same day you make it as the nutrients degrade with time and exposure to sunlight. Don't forget to share with your nearest and dearest. If they are sceptical, give a shot glass serving to try first. The lime and mint disguise the bitter kale completely if you get your proportions right ;)

ENJOY :)
